Simple cable tester that shows 8 lights in sequence (helps narrow down exactly which wire is bad).
Wire stripper (I like the little plastic ones with the finger hole) but its your choice (I dont like using the ones on the crimpers too easy to over strip and damage cables)
Punch tool (for punching wall sockets)
Good quality wire crimpers
Rj45 ends (clear clips you crimp on) get a batch of 500 or
cat 5e or cat 6 cable. (obviously)
A good wire cutting tool to cut the 8 wires or eth cables, I use 8 inch mini bolt cutters which are overkill but cut perfectly every time, alternatively get those clippers that look like pliers or tin snips (I dont recommend tin snips at all or scissors they tend to swing sideways when they cut through the wires and you get wires of different lengths instead of one even line of eight.). My exact weapon of choice is knipex cobalt cutters 8 inch.
I have never made a cable which has been faulty. I have done around 500- ends in my short IT career so far. It takes me 1 and a half to 2 minutes per end, so 4 minutes or slightly less per cable.
In my current job which I have held for 6 months all cabling has been handed over to me as the other two techs can do it but often end up having to do it again.
CB radios if you are communicating across the building with the guy at the switch/ other cabinet.

You can get a fluke and/or good quality analysis tool but this costs.
Most importantly label each end! It saves heaps of time in the future. Get the clip on ones that you can then write on.
Make sure to keep your cables the right length and tidy with Velcro or something. Do it right whilst you have the chance. Neat but not tight.
Hard to say what time overall as so many things can happen that you cant account for. You can say 5 mins per cable 300 cables and two of you = 12.5 hrs work but it is never that simple. I would say allow 4 days. It is not just doing the cabling there is labelling and tidying and troubleshooting etc.
Also get 2 cable needles if running it yourselves.
You will want to get two of each tool since there are two of you.
