WHAT IS AN INDUCTION HOB?

Similar in appearance to an electric hob, an induction hob is a sleek glass cooktop that usually sits flush with your countertop. Underneath the glass surface are copper coils. Induction cooking uses electromagnetic energy to create an alternating magnetic field, which induces electric currents in the metal of the pan. These currents generate heat directly in the pan itself. When a suitable magnetic pan is placed on the glass surface, the electromagnetic field is activated and heats the pan. Once the pan is removed, the electromagnetic connection is broken, and the hob stops generating heat.
